Ten things i'm looking forward to:

Since last weekend was a big bummer for me with my car accident, and Lilah being sick on her birthday, I thought i'd post 10 things i'm looking forward to to cheer myself up:

1.  My first craft Market coming up this weekend!.  I'm heading on a 3 hour drive to meet my BFF Em to share a stall with her.  We have a fun girls night planned and it can't come fast enough!

2.  A wedding we are going to on the 11th of November

3.  Kings of Leon Concert on the 14th of November

4.  Doing the Eureka Tower climb

5.  Our trip to Queensland!.  That can't come fast enough either.  We're all so excited for that!.  That's 4 full days of just the 4 of us.

6.  Nicer weather!.  It's been cold and rainy here.  It's Spring and I have yet to see some real spring weather.

7.  Christmas.  I love Christmas.  

8.  Houseboat.  We're going on a houseboat over Christmas for 1 week.  That's another week of family time where hubs and I aren't passing eachother to go to work.  

9.  Christmas break.  My office shuts down for 2 full weeks over Christmas and I can't wait.  I can't wait to spend 2 full weeks off with the girls and swim, play outside, go to the park...and just spend some quality time together.

10.  Last but not least, I can't wait until next July.  I'm heading home for 6 weeks!.  I know it's far away, but a girl can start counting down right?!?!?!

Lemon Coconut Cupcakes w/ Cream Cheese Icing






Lemon Coconut Cupcakes:

This is what you'll need:


1 1/2 cups self-raising flour
1/2 cup desiccated coconut
1 tablespoon grated lemon rind
1 cup caster sugar
125g unsalted butter, melted
2 eggs
1 cup milk

First preheat your oven to 180C (350F).  Lightly grease your muffin tin.

Sift the flour into a large bowl and add the coconut, lemon rind, sugar, butter, eggs and milk.







Once that's all combined divide the mixture evenly in your muffin tin


Put cupcakes in the oven for about 15 minutes until golden brown and the centre springs back lightly when touched



Now onto the icing

Cream Cheese Icing

This is what you'll need:



175g cream cheese, softened
60g butter, softened
1 1/2 cups icing sugar
1 teaspoon vanilla essence
1-2 teaspoons lemon juice

Beat the cream cheese and butter until smooth.  Gradually add the icing sugar with the vanilla essence and lemon juice, beating until light and creamy.


Slowly adding the lemon juice.....


Beating until creamy....



once the cupcakes are cooled, I put the icing into a piping bag and iced my cupcakes



Ta Da!. 
 You have yourself some super scrumptious cupcakes!

Enlisting the assistance of some super duper cute beater lickers makes clean up a little easier too

Happy 2nd Birthday, Lilah May

We had big plans for this weekend.  

Saturday was Lilah's birthday, and we were going to spend the day together, and Sunday we had a little party planned for her.  

Things did NOT go as planned.  And I am not one who deals well with things when they don't go according to plan.  I like plans and schedules.  But this diversion of plans turned out to be exactly what I needed.

If you've read my blog the other day, you know that we were in a car accident Thursday night.  Read here to catch up if you haven't read it.  

Friday we woke up to Lilah being sick.  

At first I thought "there are so many things I have to do today"...then it hit me.  My baby girl needed me to cuddle her all.day.long.  And all.night.long.  And then all.day.long on Saturday - her 2nd Birthday.  

I soaked in all her cuddles and perfection.  I've spent 2 days laying with her and cuddling her.  





I stared at her perfect chubby baby toes




I listened and felt her tiny perfect heart beating against me.  I watched the rise and fall of her chest and took it all in




The laundry is still piled up.  The dishes from Friday are still in the sink.  The crumbs are still on the floor, but I don't care.  I've had 2 perfect days.  It's ok that things didn't go according to plan because I got to cuddle my perfect little baby.  My baby spent her 2nd birthday in my arms.  

It's now Saturday night at 6:30 pm on the night of her birthday and shes in my arms asleep as I type this.  




My car accident taught me a lesson - it's ok to slow down and take it all in.  Be present in the moment.  I have been present with my babies the past 2 days.  The laundry and dishes will be there tomorrow.  I can get to them once i'm finished cuddling my babies.  

We will have cake and sing to our angel hopefully tomorrow if she's feeling better.  

Happy Birthday my sweet sweet angel.  Mommy, Daddy and Eve love you so much.
We couldn't live our life without you and we are the lucky ones to have you in our life.

WAKE UP!

I don't even know how to begin this post.  Perhaps by showing you the picture first you will get a better idea why I may be all over the place.


This is why I am so shaken up and scattered.  I was in an accident - my first accident last night.  We are all OK - thank god, but I'm still feeling dis-belief.  

It really did happen in an instant, but the weird thing is that in that instant it felt like it was minutes.  The actual impact literally lasted seconds, if not 1 second, but I can remember it as if it was played in really slow motion.  You know when they put slow-motion on TV or something, thats how it feels to me.  I remember my face almost hitting the steering wheel and it was all so slow.  It still amazes me that the air bags didn't go off.  

Once we were stopped, my first reaction was the girls.  They were fine but hysterical.  So I got them out and made sure they were ok. 

 Then I froze.

I didn't know what to do.  I got my phone and tried to call someone but couldn't.  I pressed phone, then the exit button about 10 times before I finally pressed "Hubs" in my recents.  Hubs was at work and all I said was "i've had an accident", and he kept saying "are you ok, who with?", and I just kept saying "I had an accident, I had an accident".  Oddly though I didn't shed a tear, I think I was in a panic and shocked that I couldn't have that reaction.  I wasn't emotionally there.  I was more in crisis management mode then anything.  

Once my sis-in-law came and took the girls back to her place to get them some dinner, and settle them down was I finally able to call the insurance company to arrange a tow truck.  

I'm upset about the car obviously, and ticked off at myself but more than anything i'm so thankful. I'm so thankful that we are all ok.  I was cuddling the girls last night once we got home and thinking to myself "I am SO lucky".  It doesn't matter about the car - that can be replaced but neither of my girls can.  Thank God that we are all ok, and are able to walk away.    

Even in the aftermath of my traumatic experience I am still feeling happy and thankful.

Denial

My baby is turning 2.  In 2 days.  Just like that.  How can this be?
 
I'm in serious denial about my Lulu Pop being 2.  I just can't believe it.  I can't help but think "what if this is my last baby?". 
 
What if she really is my last baby?
 
I know everyone says "time flies", but time has really literally flown by here and my baby is now a 2 yr old toddler.  Ugh, I cringe even typing the word toddler.  I want to freeze time right now, this second and keep her this small, innocent and perfect
 
Lilah doesn't talk as well as Eve did.  I think Eve came out of the womb speaking full sentences.  Lilah on the other hand says a lot of words, but doesn't put sentences together.  She still acts "babyish", as where Eve was more "grown up" at this age.
 
 She still has a bottle of milk at night.  Some may say "she's too old for a bottle", but I don't care.  She's my baby and she can have a bottle of milk if she wants.  And sometimes, when I'm home with her on Fridays and on the weekends, she will ask for a "bubba" before her nap, and I give it to her.  We cuddle and she drinks her milk. 
 
She still sleeps in a crib.  Some may also say that she should be in a bed, but again I don't care. 
 
I'm trying to look forward with excitement as to what shes becoming and how much she flourishes, but I can't help but be really sad about her being 2.  Some of you may think "she's crazy", but I'm really struggling with this. 
 
I have the day off with her tomorrow and I am going to spend every second soaking up my 1 yr old.  She will only be 1 for 1 more day.

WIWW To Family Fun Day

A few weeks ago the Dental Practice that my Sister-In-Law works at was having a Family Fun Open Day. We all went out and had a great time.  The girls got their faces painted, colored (Eve won 2nd in the coloring competition), they had sausages too.  While it was a bit chilly, we had fun none the less.
