The floor is yours Lacee:
Hi everyone, my name is Lacee Griffith and I am a wife, stay-at-home momma and newbie to the blogging world. I started my blog based on the thought that us mommas need to stick together. Through it I hope to inspire fellow mommas and share some of my greatest passions: being a momma, family, creativity, everyday life lessons and having fun. I'd be just tickled if you would check out my blog...click here to do so.
I am honored and uberly excited to be posting on Miss Mommy today! This is actually my very first guest post and I am grateful to Nicole for her support of my blog.
After thinking long and hard about what to share with you all today, I thought what better than a tasty summer time treat. It's so much easier to make friends over delicious food...especially one that involves peanut butter and chocolate! So ladies, lets get to know each other over these...
Peanut Butter & Chocolate Ice Cream
uuuh you might wanna wipe the drool from your chin it's not very attractive ;)
Here's what you'll need:
Ok let's start with the peanut butter cookies
1 cup sugar, 1/4 cup additional to roll cookies in
1 stick butter, at room temperature
1 cup smooth peanut butter
1 teaspoon vanilla
1/2 teaspoon salt
1/2 teaspoon baking soda
1 1/2 cups flour
Preheat oven to 375. Grease a baking sheet or use a silpat. In a large bowl, cream together sugar and butter. Beat in egg to mixture. Mix in peanut butter and vanilla until smooth and creamy. Stir in salt, baking soda and flour until well combined.
Then add the last ingredient
Roll dough in to ball roughly the size of a golf ball like so...
Next, roll the ball in sugar...
Then using a fork dipped in sugar flatten the ball like this...
Bake for 12-15 minutes then place cookies on a rack to cool completely
Once the cookies are cool its time to get naughty.
Take your chocolate ice cream out of the freezer and let it soften a bit. Then place a scoop full of ice cream between two cookies...
Put the other cookie on top and gently smoosh down
Wrap sammie in a piece of plastic wrap or parchment paper then stick in the freezer until the ice cream firms back up.
if you really wanna be rebellious you can roll the cookie in mini chocolate chips like this...
Ooooh yeah baby
The perfect treat on a hot summer day.
